FIELD: food industry.
SUBSTANCE: invention refers to process of production of nectars. The procedure consists in washing and rinsing carrot and yacon at specified parametres of the process, in their separate crumbling and finishing with production of corresponding purees; further purees are blended with orange juice and sugar syrup, heated, pre-packed, vacuumised and sterilised.
EFFECT: facilitating production of new nectar out of non-traditional raw material enriched with biologically active substances; by its chemical composition nectar can be recommended for dietary nutrition.
