FIELD: food industry.
SUBSTANCE: invention refers to canned foods industry. According to the procedure cut red beet is preliminary prepared, pre-packed into jars, and poured over with hot water of 95°C temperature for 3-4 minutes. Further water is replaced with a mixture at 97-98°C temperature. Jars are rolled-on and sterilised in an autoclave with successive cooling in another autoclave or tank.
EFFECT: facilitating shortened sterilising and saving heat energy and water.
