FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of canned side order beet roots. Under the method cut beet roots after preliminary preparation are packed in jars and filled with at least 95°C hot water for 3-4 min. After that water is replaced with 97-98°C, hot filler, the jars are sealed and sterilised in autoclave according to mode with following cooling in other autoclave or container. In accordance with mode
EFFECT: this enables sterilisation duration decreases combined with thermal energy and water saving.
