FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used in production of flour confectionery goods. Emulsion is prepared by consecutively mixing melange, invert syrup, icing sugar, salt, flavouring, water and a fat-containing product. Then phosphatide concentrate is added as well as baking soda and barley-malt extract. Mixture of buckwheat flour and whole wheat grain is prepared. Dough is kneaded out of this mixture and prepared emulsion and then work pieces are formed and baked. At the same time a filling is prepared by steeping gelatin in pumpkin mash. The mixture made up granulated sugar, pumpkin mash, gelatin and syrup is heated to 106-107°C, cooled to 60-65°C and citric acid is added. Then the work piece with filling is laid with ratio of 65:35, then goes the other work piece, then they are pressed together by applying pressure downwards on top of the finished product. For this all ingredients are used in the ratio prescribed.
EFFECT: invention enables to increase quality and biological value of biscuits, reduce consumption of wheat flour, expand the range of flour confectionery goods of improved composition and lower production costs.
