FIELD: food industry.
SUBSTANCE: invention relates to the food industry. The method of producing butter biscuits involves whipping the powdered sugar and softened butter for 3-4 minutes until the sugar grains dissolve. Then melange, date syrup and yogurt are added, churning is continued for 2-4 minutes. Then one should add baking soda, vanilla powder and mix for 7-9 minutes until a homogeneous prescription mixture is formed. Then the resulting mixture is kneaded with sifted flour for 2-3 minutes. From the kneaded dough, dough pieces are formed by a deposit method, which are sent to baking at a temperature of 180°C for 10-15 minutes. The dough for butter cookies is prepared with the following choice of the ratio of recipe components, kg per 100 kg of finished products: wheat flour of the highest grade 43.2-47.8, butter 16.5-20.0, powdered sugar 10.4-14.6, yogurt 8.3-10.2, melange 11.7-14.3, vanilla powder 0.35-0.45, drinking soda 0.08-0.1, date syrup 10.2-13.9.
EFFECT: invention makes it possible to obtain a product with improved organoleptic characteristics, reduced sugar content, increased nutritional value, which makes it possible to recommend it for inclusion in the diet of lactating women, persons adhering to a healthy lifestyle, as well as for preventive nutrition.
