FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe ingredients, extraction of red tea by liquid nitrogen with corresponding miscella separation, girasol-sunflower cutting, drying it in microwave field at preset process parametres and frying, cutting, drying of rosehips in microwave field at preset process parametres and further drying them up by convective method, frying barley grains, acorns, nut kernels, kernels of fruit bones and soya, mixing of girasol-sunflower, rosehips, barley grains, acorns, nut kernels, kernels of fruit bones and soya, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen. EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
