FIELD: food industry.
SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe components, extraction of cinnamon with liquid nitrogen to separate according miscella, girasol-sunflower cutting, drying in microwave field at specified parametres of process and frying, rosehips cutting, drying in microwave field at specified parametres of process and additional convective drying, frying of barley grain, acorns, nut kernels, fruit stone kernels and soya. Then girasol-sunflower, rosehips, barley grain, acorns, nut kernels, fruit stone kernels and soya are mixed, produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one with simultaneous freezing of mixture, and it is cryo-ground in medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
