SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe components, extraction of jeera by liquid nitrogen with separation of according miscella, cutting of girasol-sunflower, its drying in microwave field at specified parametres of the process and frying, rosehips cutting, drying in microwave field at specified parametres of the process and its additional convective drying, frying of barley grain, acorns, nut kernels, fruit stone kernels and soya, mixing of girasol-sunflower, rosehips, barley grain, acorns, nut kernels, fruit stone kernels and soya, impregnation of produced mix by separated miscella with simultaneous increase of pressure, pressure reduction down to atmospheric one with simultaneous freezing of mix and its cryo-grinding in medium of released nitrogen.
EFFECT: invention makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
