FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing recipe ingredients, extracting almond blossoms with liquid nitrogen with corresponding miscella separation, cutting yacon, drying and roasting it, roasting barley grain, oats, acorns and kernels of nuts. Yacon is dried in microwave field till residual humidity about 20% at microwave field power providing warming of yacon inside the bits till temperature 80-90°C during at least an hour. Yacon, barley grain, oats, acorns and nut kernels are mixed in mass ratio of 3:7:3:4:3. The obtained mixture is impregnated by separated miscella with simultaneous pressure boost. The pressure is released until it equals the atmospheric pressure along with mixture freezing. Then the mixture is cryomilled in medium of evolved nitrogen.
EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
