FIELD: food industry.

SUBSTANCE: invention relates to food industry and to bakery products cooking, in particular intended for healthful and dietary meals. Method of preliminary activation of compressed yeast includes preparation of growing medium for activation, adding milled compressed yeast to the growing medium to obtain a mixture and proving of the mixture. The growing medium is prepared by way of mixture of flour, water and apple refuse powder, obtained by way of drying apple refuse until their moisture content is 6-8%, following milling in a 0.1-0.5 mm thick thin film rotating spirally under pulsing pressure gradient 10-15 MPa and temperature 20-30°C; the powder is added in an amount of 0.5-1.5% of the flour weight in terms of finished bakery product.

EFFECT: method provides for high dough fermentation property of compressed yeast, reduction of technical process duration and improved quality of bakery products.
