FIELD: food industry.

SUBSTANCE: method includes production of a nutrient medium for activation, introduction of milled compressed yeast into the nutrient medium for a mixture production and soaking. The growing medium is prepared by way of mixture of flour, water and a protein mass produced by way of chopping sunflower cake with oil content 8-12%, following milling in a 0.5-1.0 mm thick thin film rotating spirally under pulsing pressure gradient 10-15 MPa and temperature 20-40°C. The protein mass is added in an amount of 3-6% of the flour weight in terms of finished bakery product.

EFFECT: method allows to increase compressed yeast dough fermentation property, to reduce the technological process duration and to improve quality of the bakery product.
