FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing recipe ingredients, extracting nutmeg flowers with liquid nitrogen with corresponding miscella separation, cutting girasol-sunflower, drying it in a microwave field at preset process parametres and roasting it. Besides the method involves roasting girasol-sunflower, roasting barley grains, chestnut and soya, mixing of girasol-sunflower, barley grain, chestnut and soya. Then the obtained mixture is impregnated by separated miscella with simultaneous pressure boost and pressure releases until the pressure equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology.
