FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe ingredients, extraction of orange rind by liquid nitrogen with corresponding miscella separation and cutting. In addition, the method involves drying girasol-sunflower in microwave field at preset process parametres and roasting girasol-sunflower, drying rosehips, apples and pears in microwave field at preset process parametres and drying them up by convective method, roasting barley grains, mixing girasol-sunflower, rosehips, apples and pears and pressure boost. Then the pressure is released down to the atmospheric pressure and the mixture is being frozen at the same time and cryomilled in medium of evolved nitrogen.
EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology.
