SUBSTANCE: invention relates to the process of producing coffee substitutes. The method provides for preparing the formula components, extracting orange zest using liquid nitrogen with correspondent miscella separation, cutting chicory roots, drying them in a microwave field at given process parametres and roasting them, then drying rosehips, apples and pears in a microwave field at given process parametres and their convective post-drying. Barley grains are roasted. The chicory roots, barley grains, rosehips, apples and pears are mixed up together. The obtained mixture is impregnated with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.
EFFECT: invention ensures producing a flavoured drink using a waste-free technology.
