FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of beet root preserves. Cut beet roots after pre-processing and packing in jars is treated during 90-100 seconds in microwave chamber with frequency of 2400±50 MHz, filled with 97-98°C hot filler, repeatedly processed in microwave field with frequency 2400±50 MHz during 60-70 seconds, the jars are sealed and sterilised in autoclave according to mode with following cooling in other autoclave or container in accordance with mode .
EFFECT: invention allows to decrease sterilisation duration time and save thermal energy and water.
