FIELD: food industry.
SUBSTANCE: invention relates to technology used in production of diet flour confectionary products. Yacon is cut, dried in microwave field at specified parametres down to residual moisture of around 20%, fried and exposed to cryo-grinding in liquid nitrogen to make flour. Dough is made from wheat flour mixed with yacon flour, yolks, salt, soda, vegetable oil, phospholipids and water, and sheets are baked. Depending on filling formula, girasol, girasol-sunflower, yacon or chicory are cut, dried in microwave field at specified parametres of the process, fried. Basil is extracted with liquid nitrogen to separate according miscella. girasol, girasol-sunflower, yacon or chicory are impregnated with separated miscella in cryo-mill drum, and cryo-grinding is carried out in the medium of released nitrogen to produce flour. To produce filling, flour of girasol, girasol-sunflower, yacon or chicory is mixed with culinary fat, sweetener "Sladeks" and waffle crumb. Waffles are shaped from sheets and filling.
EFFECT: diabetic waffles have delicate and fragile consistence, coffee taste and flavour.
