SUBSTANCE: group of inventions relates to the field of manufacturing dietary flour confectionary products for nutrition of diabetes patients. Methods envisage making waffles from sheets and filling. In the process of waffle sheets production one performs girasol-sunflower cutting, its drying in the microwave field under the specified process parametres, additional drying by convective method and cryogrinding in liquid nitrogen with the production of flour, making of dough from high-grade wheat flour, girasol-sunflower flour produced as described above, yolks, salt, soda, vegetable oil, phospholipids and water, its moulding into sheets and baking. In the process of filling production one undertakes extraction of orange peel with liquid nitrogen with separation of according miscella, cutting girasol or girasol-sunflower or yacon or chicory, its cutting, its drying in microwave field with specified parametres of the process, frying, impregnation with separated miscella with simultaneous increase of pressure, pressure drop down to atmospheric one with simultaneous freezing of raw materials and its cryo-grinding in the medium of released nitrogen to produce flour; its mixing with culinary fat, sweetener "Sladex" and waffle crumb.

EFFECT: produced diabetic waffles have improved consistency and coffee taste and flavour with no coffee added to the formula.
