FIELD: food industry.
SUBSTANCE: group of inventions relates to the manufacturing technique of dietary flour confectionary products with a coffee aroma for nutrition of diabetes patients. Methods involve preparation of the recipe components, cutting of yacon, its drying in the microwave field under the specified process parametres, additional drying by convection method and cryogrinding in liquid nitrogen to produce flour, making of dough from high grade wheat flour, yacon flour produced as described above, yolks, salt, soda, vegetable oil, phospholipids and water, its moulding into sheets and baking, extraction of clove by liquid nitrogen with the separation of the respective miscella, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in the microwave field under the specified process parametres, frying, impregnation with the separated miscella along with the simultaneous increase of pressure, pressure reduction down to the atmospheric one with simultaneous freezing of raw material and its cryogrinding in the medium of released nitrogen to make flour, mixing of the latter with cooking fat, sweetener "Sladex" and waffle crumbs to make filling, and forming waffles from the sheets and filling.
EFFECT: produced diabetic waffles have improved consistency and coffee taste and flavour with no coffee added to the formula.
