SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of almond blossom with liquid nitrogen to separate according miscella. Yacon is cut, dried in microwave field at specified parametres of the process and fried. Apples are cut and dried in microwave field at specified parametres of the process, and additional convective drying of apples is carried out. Yacon and apples are mixed in the mass ratio of 3:2, and produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Finished mix is exposed to cryo-grinding in medium of released nitrogen.
EFFECT: invention provides for improvement of drink organoleptic properties due to its enrichment with extractive substance of miscella and their preservation.
