SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of anisetree with liquid nitrogen to separate according miscella, girasol-sunflower is cut, dried in microwave field at specified parametres of the process and fried. Apples are cut, dried in microwave field at specified parametres of the process, and their additional convective drying is carried out. Black chokeberry is dried in microwave field at specified parametres of the process, and its additional convective drying is carried out. Girasol-sunflower, apples and black chokeberry are mixed. Produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric value with simultaneous freezing of mix and its cryo-grinding in the medium of released nitrogen.
EFFECT: invention provides for production of new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
