SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in extracting jeera with liquid nitrogen and in separating corresponding miscella, in cutting and drying of girasol-sunflower in SHF field at specified parametres of process and roasting of girasol-sunflower, in cutting and drying of apples in SHF field at specified parametres of process and convective finish drying of apples, in drying of black chokeberries in SHF field at specified parametres of process and convective finish drying of black chokeberry, in mixing girasol-sunflower, apples and black chokeberry, in soaking of produced mixture with separated miscella simultaneously building pressure up, in successive dropping pressure to atmospheric with simultaneous freezing of mixture and cryo-milling it in medium of precipitated nitrogen.
EFFECT: facilitating production of new aromatised coffee drink out of non-traditional raw material by non-waste process.
