SUBSTANCE: invention relates to technology used to produce coffee substitutes. Drink is produced by extraction of cinnamon with liquid nitrogen to separate according miscella, preparation and cutting of girasol-sunflower, its drying in microwave field down to residual moisture of around 20% with microwave field capacity providing for girasol-sunflower heating until the temperature inside pieces reaches 80-90°C, for at least 1 hour. Girasol-sunflower is fried. Lemon pulp is dried in microwave field down to residual moisture of around 20% with microwave field capacity providing for lemon pulp heating until the temperature inside berries reaches 80-90°C, for at least 1 hour. Lemon pulp is additionally dried down to residual moisture of around 5% by convective method. Girasol-sunflower and lemon pulp are mixed in mass ratio of 7:3. Then produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one, simultaneously mix is frozen and cryo-ground in medium of released nitrogen.
EFFECT: method makes it possible to produce flavoured coffee drink with improved organoleptic properties and their preservation.
