FIELD: food industry.
SUBSTANCE: invention relates to food concentrate industry, namely to methods used to produce extruded products. Cereals, such as lupine, beans, lentils and corn are ground down to 0.6-0.7 mm, mixed in the mass ratio of 12.1:11.7:65.0:11.2, moistened till 15…16% and treated in single-auger extruder at product temperature of 403…408 K in front of matrix and pressure in pre-matrix zone of extruder of 5.5…6.2 MPa.
EFFECT: invention makes it possible to produce combined extruded texturates of high quality balanced in their protein composition, to improve their nutritious and biological value, to expand assortment of extruded texturates for their use as half-finished products widely used in meat, milk, baking, macaroni and other food industries.
