FIELD: food processing industry, in particular production of extruded foodstuffs.
SUBSTANCE: claimed method includes blending of potato granules with particle size of 0.5-1.3 mm with dry defatted milk in amount of 10-20 % based on potato granule mass and humidifying to 13-17 %. Product is treated in extruder at temperature in extruder prematrix zone of 449-457 K and pressure of 5.7-6.6 kPa. Obtained extrudate is draped with salt-and-vitamin additive in amount of 3 % based on extruded potato stick mass.
EFFECT: combined extruded foodstuffs of high quality and improved nutritive value and extended assortment of extruded products.
