FIELD: food industry.
SUBSTANCE: invention relates to technology for production of flour confectionery products. In process of waffles making they are formed from waffle sheets baked from dough and filling. Dough contains a mixture of prime wheat flour and flour of girasol-sunflower hybrid produced according to a specific technology, yolks, salt, soda, vegetable oil, phospholipids and water. Filling contains culinary fat, dry milk, sugar powder, flour from girasol or girasol-sunflower or yacon or chicory and waffle crumb. Flour for filling is prepared by extraction of allspice with liquid nitrogen with separation of according miscella, preparation of girasol or girasol-sunflower or yacon or chicory, its cutting, drying in microwave field with specified parametres of the process, frying, impregnation with separated miscalls with simultaneous increase of pressure, pressure drop down to atmospheric one with simultaneous freezing of raw materials and its cryo-grinding in the medium of released nitrogen.
EFFECT: produced waffles have improved consistency and coffee taste and flavour with no coffee added to the formula.
