FIELD: food industry.

SUBSTANCE: group of inventions relates to technology of production of flour confectionary. Methods include preparation of recipe components, cutting of yacon, its drying in SHF field at specified process parametres, after-drying by convective method and cryogrinding in liquid nitrogen obtaining flour. Dough is made from wheat flour of superior quality, obtained by described technology flour from yacon, yolks, salt, soda, vegetable oil, phospholipids and water. Dough is formed in form of sheets and baked. Lemon rind is extracted with liquid nitrogen with separation of corresponding miscella. Depending on composition of filling girasol or girasol-sunflower or yacon or chicory is cut, dried in SHF field at specified process parametres, roasted, soaked with separated miscella with simultaneous increase of pressure. Pressure is dropped to atmospheric with simultaneous freezing of raw material. Raw material is cryogrinded in medium of released nitrogen obtaining flour. To obtain filling, flour from girasol or girasol-sunflower or yacon or chicory is mixed with cookery fat, dry milk, sugar powder and wafer crumbs. Filling is spread on wafer sheets and cut obtaining wafers.

EFFECT: obtained diabetic wafers have improved consistence and coffee taste and flavour without having coffee in composition.
