FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method comprises extracting vanilla by liquid nitrogen. Then corresponding miscella is separated. Then girasol/sunflower is cut, dried in the microwave field at preset process parametres and roasted. Hereafter orange refuses are dried in the microwave field at preset process parametres and dried up by convective method. Girasol/sunflower is mixed with orange refuses, the obtained mixture is impregnated with separated miscella with simultaneous pressure boost. Whereupon the pressure is released down to the atmospheric pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to obtain new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
