FIELD: chemistry, brewing.
SUBSTANCE: invention relates to food industry, particulary to brewing industry and methods of preparing beer wort. The method involves the following stages: crushing malt and grain products, preparation of mash, including its hydrodynamic processing, saccharification with subsequent filtration, lixiviation of wort, boiling it with hops and evaporation of excess moisture. The filtration process is carried out through al layer of suspended mash at temperature of 50-80 °C, which is maintained by alternating a jet of steam and nitrogen, fed to the filtration sieves from under.
EFFECT: method shortens duration of the filtration cycle with maximum output of extract and provides automatic control of the process of preparing beer wort on quality criteria.
