FIELD: brewing industry.
SUBSTANCE: the application of the explosive autohydrolysis method for obtaining caramel malt from malting barley by processing it with superheated steam under a pressure of 1.2 to 1.6 MPa in the reactor of an explosive autohydrolysis apparatus and with a processing time of 1 to 10 minutes is described.
EFFECT: the invention allows performing the technological process in one stage, to intensify the process, to shorten the processing time and to obtain malt with a comparable composition and satisfactory characteristics.
