FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. Method includes preparation of pectin containing mixture by kneading pectin components and sugar in water till complete dissolution of pectin. Jelly mass preparation is carried out by mixing sugar containing mixture from teacle, sugar, water with pectin containing mixture and boiling till temperature of 105-107°C. At the same time sugar containing mixture can be used as a mixture of components as syrup with humidity of 16-20%. Boiled mass is mixed with solution of colouring agent of titanium dioxide. Candy's body formation is carried out by casting into starch.
EFFECT: invention allows simplifying of the process of jelly mass obtaining for candies with improved organoleptic properties.
