FIELD: food industry.
SUBSTANCE: invention relates to confectionery food industry. The sweet has a glased body made of jelly mass including pectin, sugar, molasses, flavouring, colouring titanium dioxide, propylene glycol, caramelised sugar, water, and filling placed in it made from material containing condensed evaporated full cream milk, molasses, fatty component, sorbitol, invert syrup, monoglycerides, edible salt, flavour. Jelly mass for body of the sweet is obtained by boiling prescription components with preliminary obtained mixture containing pectin to a temperature of 105-107°C and the filling is obtained by boiling prescription components to a temperature of 113-115°C. Moulding of bodies of sweets is carried out by simultaneous supply of jelly mass and mass for filling through funnels of dropping device dispensing candy mass into the lockers with starch. All prescription components are used in the given ratio.
EFFECT: invention enables to obtain sweets with improved consumer and organoleptic properties.
