FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of canned "Side order beet roots". Beet roots are packed in jars; the jars are filled with water heated to minimum 95°C and thus maintained during 3-4 minutes. After that the jars are drained, refilled with fililng heated to 97-98°C, closured and autoclaved under an innovative regime.
EFFECT: this enables decreasing sterilisation duration period combined with thermal energy and water saving.
