FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved canned "Side order carrots". Prepared carrots are packed in jars; the jars are filled with water heated to minimum 95°C and thus maintained during 3-4 minutes. After that the jars are drained, refilled with fililng heated to 97-98°C, closured and autoclaved according to an innovative mode.
EFFECT: reducing sterilisation process duration and saving thermal energy and water.
