SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of cocoa husk with liquid nitrogen with separation of according miscella, girasol-sunflower cutting, drying in microwave field at specified parametres of process and frying, pomegranate rind cutting, drying in microwave field at specified parametres of process and additional convection drying, mixing girasol-sunflower and pomegranate rind, impregnation of produced mix with separated miscella with simultaneous increase of pressure, pressure reduction down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
