SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. The method provides for extraction of cocoa husks by liquid nitrogen with corresponding miscella separation. Yacon is cut, dried in microwave field at preset process parametres and roasted. Pomegranate peels are cut, dried in microwave field at preset process parametres and dried by convective method. Yacon and pomegranate peels are mixed. The obtained mixture is impregnated by separated miscella with simultaneous pressure boost. It is followed by depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: invention ensures production of new flavoured coffee drink out of unconventional raw materials according to nonwaste technology.
