SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of nutmeg flower by liquid nitrogen to separate according miscella, yacon preparation, cutting, drying in microwave field at the specified parametres of the process and frying, grape pulp drying in microwave field at the specified parametres of the process and additional drying by convective method. Mixing of yacon and grape pulp, impregnation of produced mix with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in the medium of released nitrogen.
EFFECT: invention makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
