FIELD: chemistry.
SUBSTANCE: invention relates to beer brewing technology. The method involves mixing coriander and hop, extraction of the obtained mixture with liquid nitrogen and separation of the corresponding miscella, cutting, drying in a microwave field at given process parametres and roasting girasol-sunflower. Further, girasol-sunflower is mixed with malt. The obtained mixture is saturated with the separated miscella while simultaneously increasing pressure to a value which corresponds to pressure of saturated nitrogen vapour at saturation temperature, releasing pressure to atmospheric level with simultaneous freezing of the mixture, its cryogenic grinding in a medium of the released nitrogen, pouring water and saccharification to obtain wort. Brewing yeast is then added and primary fermentation, after fermentation and filtration are then carried out.
EFFECT: invention shortens duration of the process and increases foam stability of the end product.
