FIELD: food industry.
SUBSTANCE: invention refers to technology of production of substitutes for coffee. The method provides preparation of prescription components, extraction of cardamom by liquid nitrogen with corresponding miscella separation, girasol-sunflower cutting, drying in the microwave field at the given process parametres and frying, drying in the microwave field at the given process parametres and convective drying of rosehips, apples and pears, frying barley grains. Mixing of prepared girasol-sunflower, rosehips, barley grains, apples and pears with a ratio by weight 5:9:2:2:2. Soaking of the obtained mixture with separated miscella is carried out with simultaneous increase of pressure, and release of pressure up to atmospheric with simultaneous freezing the mixture and its cryomilling in medium of the evolved nitrogen.
EFFECT: method enables to obtain new flavoured coffee drink production from non-traditional raw materials using non-waste technology.
