SUBSTANCE: invention refers to fish processing industry. The instrument (13) is designed to be a suction element (23) for removal of viscera by suction. Connected to the suction element (23) is connected an element (35) for seizure and/or compression of viscera being removed. The device contains an instrument (13) for removal of viscera by suction, a gauge for fish specific parametres definition, at least a single control unit for control of the instrument (13) in accordance with the fish specific parametres having been defined by the gauge. The method involves usage of the above instrument.
EFFECT: invention ensures reliable fish viscera removal.
