SUBSTANCE: invention relates to food industry. The device (10) for cutting off side bones of beheaded, drawn and abdomen-opened fish transported in transportation seats (15) contains the upper bone guide (12), the lower bone guide (13) and a separation unit (14) for fish fillet separation from the side bones (11). The separation unit (14) contains a separation tool (16) with a supporting bearing (17) and may switch between the standby and the working positions. The device (10) specificity is as follows: the separation tool (16) is represented by a rotary disc blade (18) while the supporting bearing (17) is represented by a stationary element (19) with the disc blade (18) and the element (19) capable of rotation round two axes and the element (19) capable of movement relative to and independent of the disc blade (18). Additionally, the invention relates to a filleting machine containing such a device.
EFFECT: invention enables the cut surface improvement and individual performance of cutting.
