FIELD: chemistry.
SUBSTANCE: composite yeast for high concentration alcohol fermentation from standard raw materials such as maize, cassava, wheat and rice contains: Thermostable Saccharomyces cerevisiae yeast, acid protease, phytase, cellulase, β-glucanase and pectinase in given ratio of ingredients. Besides the conventional fermentation composite yeast, the invention can decompose raw materials, increase content of nutrients in the wort, accelerate growth of yeast and provide stress resistance.
EFFECT: invention increases content of fermentation alcohol, reduces content of residual starch and residual reducing sugars in the alcohol.
