FIELD: agriculture.

SUBSTANCE: method involves extraction of root mass of licorice, selection of the root mass. The invention pertains to agriculture and biology and can be used in the storage of beetroot, providing for longer retention of its properties for the whole storage period. The method of storing beetroot involves cyclic treatment of the beetroot by a sinusoidal electromagnetic field using a low frequency generator in places of its constant storage continuously for the whole storage period. Treatment is done in successive continuous cycles, each of which involves two stages, on the first of which treatment is done with a frequency in the range of 12÷45 Hz for 40 minutes, and on the second stage of which treatment is done with a frequency in the range 15.1÷19 Hz for 20 minutes.

EFFECT: longer retention of properties of beetroot for the whole storage period due to improved storability.
