FIELD: instrument making.

SUBSTANCE: device comprises the following components arranged along vertical axis - upper compactor with electrode on lower base, limiter of motion on upper base and possibility to move along axis, hollow reservoir, lower compactor with electrode on upper base, with mechanism of motion along vertical axis and possibility to register the moment of specified compression value, retaining spring and electric metering circuit. Upper compactor is arranged with the possibility to release upper window of reservoir, and lower compactor - with the possibility of rigid fixation. Analyser is also equipped with circuit for fixation of distance between electrodes and photometric block with sources of radiation arranged over upper compactor with the possibility to move towards vertical axis and photodetector of scattered radiation. Photometric block, walls of hollow reservoir and surface of previously compacted sample supported by fixed lower compactor, produce photometric chamber with permanent dimensions.

EFFECT: simultaneous express measurement of quality and quantity properties of gluten.
