FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to production of bakery products intended for prophylactic nutrition. Composition contains baking wheat white flour, dried bakery yeast, sand sugar, table salt, biologically active supplement "Fukolam-S" and drinking water taken so that dough moisture makes 46%±(0.5-1.0).
EFFECT: invention makes it possible to improve organoleptic properties, such as porosity, condition of bread surface, and also to increase specified volume, height and shape stability of bakery products, to increase content of protein substances and soluble food fibres.
