FIELD: food industry.
SUBSTANCE: invention relates to food industry. Composition for production of bakery products contains bakery wheat flour, yeast, sugar, salt, common food, drinking water and an additive based on brown algae. Water is taken by calculation to ensure the humidity of the dough 43 %±(0.5–1.0), and water-ethanol extract is used as an additive Pale sargassum in the amount of 4–6 % by weight of flour.
EFFECT: invention allows to increase the biological value of the finished product while ensuring high organoleptic and physico-chemical parameters.
