FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to bakery, and can be used for production of enriched bakery products. Composition for making wheat bread contains wheat flour, pressed bakery yeast, sugar sand, culinary food salt, dry milled yeast residue of fermentation honey drink, ascorbic acid solution 1 %, and water. Components are used at the following ratio, wt. %: wheat flour 66.3–66.5, pressed bakery yeast 2.9–3.1, culinary food salt 1.2–1.4, sugar sand 2.4–2.6, dry milled yeast residue of the fermentation honey drink 2.9–3.1, ascorbic acid solution 1 % 1.4–1.6, water – as per calculation.
EFFECT: invention allows to ensure improvement of nutritional value of bread, as well as quality of finished products.
