FIELD: food industry.
SUBSTANCE: invention is aimed at development of composition to make dough for bakery products. Composition contains sifted rye flour, blanched and ground wheat grain that has been previously germinated up to 1-3 mm for 24-30 hours, pressed bakery yeast, salt, vegetable oil and water. In versions of compositions it contains additives such as liquid honey, raisins, raisins and honey, sesame seeds, sesame seeds and honey, ginger, ginger and honey, sesame seeds and raisins, pine nuts. Components of composition are taken in an appropriate ratio.
EFFECT: invention provides for preparation of affordable digestible food products balanced in natural microelements and providing for protection of human body against toxic free radicals, and also provides for improved biological value, high content of vitamins and superb taste properties of finished product.
