SUBSTANCE: invention is related to food industry and catering, it may be used in production of cakes. The method for production of cake envisages beating butter with sugar sand, melange, adding flour, forming and baking. Flour is added in the form of a mixture of buckwheat and prime wheat flour in a ratio of 3:7 while melange (before combining with sugar-and-butter mass) is beaten with water in a ratio of 7:3.

EFFECT: invention allows to increase specific volume and porosity of the product; additionally it allows to increase nutritional value.
