FIELD: food industry.
SUBSTANCE: invention relates to the confectionery industry, and concerns a method of producing gluten-free cupcakes. The method of producing gluten-free cakes is characterized by preparing a dough consisting of whipped melange with white sugar, butter, flour from green bananas of Platano variety, Chinese unabi dates, table salt, baking soda, followed by pouring into molds and baking. A gluten-free cake is prepared with the following choice of the ratio of the initial recipe components, kg/1,000 kg of the finished product: 332.0 of flour from green bananas of Platano variety, 173.4 of white sugar, 216.6 of butter, 173.2 of melange, 0.86 of table salt, 0.86 of baking soda, 216.6 of Chinese unabi dates.
EFFECT: invention makes it possible to develop a recipe for dietary gluten-free muffins, improve quality indicators, increase nutritional value, reduce energy value and expand the range of flour confectionery products intended for feeding people with celiac disease.
