FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular to a technology for complex vegetables processing. The method envisages chicory preparation, its milling, cavitation extraction with nanostructured water at specified parametres of the process. Then the extract is separated in phases and cleaned by way of tangential microfiltration with inulin-containing solution and cake production. Then cake is exposed to cavitation extraction with nanostructured water at specified parametres of the process with further separation of phases and tangential microfiltration. The prepared extract is concentrated and dried with pectin production. Cake produced after extraction is squeezed and dried to produce food fibre. Inulin-containing solution is concentrated and dried with inulin production or hydrolysed and concentrated with syrup production.

EFFECT: method allows to implement complex processing of chicory with high efficiency of its components separation and high purity of finished products.
